  • Whole wheat orzo pasta - 1 cup
  • Sweetcorn - 400g
  • Diced red bell pepper - 1
  • Diced zucchini - 1
  • Finely chopped onion - 1
  • Minced garlic cloves - 2
  • Diced tomatoes - 400g
  • Chopped spinach or kale - 1 cup
  • Chicken or vegetable broth - 4 cups
  • Smoked paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt and pepper to taste

    It is a stew recipe of sausages, orzo, sweetcorn, and vegetables of your choice. Orzo is a pasta of rice shape. Don’t go by its appearance because it is made of wheat semolina, similar to other pasta.

    To make this recipe for 4 servings follow these simple instructions and you will be able to make it in no time:

    • Firstly, start by preparing the ingredients. Dice the vegetables and sausages. Then, chop the onions and mince the garlic cloves. Also, drain your sweetcorn.
    • To begin with cooking, heat olive oil in a large pot over medium heat.
    • Then, add the diced sausages and cook them until they release their oil and become crispy. It can take around 5-7 minutes.
    • Once the sausages are done remove them from the pot and keep them aside. Now add the chopped onions in the same oil and saute them for 3-4 minutes until they become translucent.
    • Then, add the minced garlic and diced vegetables, and cook them for another 2-3 minutes until the vegetables are soft.
    • Now it is time to add your orzo pasta and stir it to coat the pasta well with oil and seasoning.
    • Further, add the tomatoes, broth, smoked paprika, oregano, salt, and pepper to the pot and let it boil. Later reduce the heat, stir occasionally, and let it simmer for about 10-12 minutes.
    • Once your pasta is cooked add sweetcorn, cooked sausages, and spinach or kale. Let it cook until the leafy greens wilt.
    • Now it is the tasting time! Taste the stew and adjust the seasoning. Lastly, garnish the stew with chopped parsley and serve it along with your favorite bread or a side dish to complete the meal.
