The peanut butter recipe is super quick and easy to make. It has 3 steps cooking noodles, making sauce, and lastly combining them together. Let’s get going:

    • Firstly, cook the rice noodles according to the packaging instructions. It will take around 5-7 minutes if you have thin rice noodles.
    • Meanwhile, in a medium bowl take tamari or soy sauce, maple syrup, rice vinegar, sriracha, minced garlic, peanut butter, and grated ginger. Whisk them all together and then gradually add water to adjust the consistency of the sauce. The consistency of a peanut butter sauce should be smooth and pourable.
    • Then, in a pan saute all your julienned veggies with a splash of oil or water (for oil free option). Saute them for about 3-5 minutes and they will become crisp and tender.
    • Once it is done, add the cooked noodles to the veggies pan. Later, pour the peanut sauce over the noodles then toss everything well. If the consistency of the sauce seems to be thick then you can add some water.
    • Lastly, garnish your noodles with fresh coriander, green onions, and sesame seeds. Then, serve it hot or at room temperature.
