Ingredients
  • Boneless Chicken - 450g
  • Zucchini - 2
  • Red Bell Peppers - 2
  • Broccoli - 1
  • Salt - 1/4 Tbsp
  • Black Pepper - 1/4 Tbsp
  • Olive Oil - 2 Tbsp
  • Chicken Broth - 1/4 Cup
  • Pumpkin Seeds - 1/2 Tbsp
  • Parsley - 1 Tbsp

    1. Firstly in a large bowl, add 1 tbsp of olive oil. Heat it and add the chicken bites.
    2. Then, season it with salt and pepper.
    3. Now, over medium flame, heat a large skillet with 1 tbsp olive oil.
    4. After that, add seasoned chicken bites and cook for about 5-7 minutes until the chicken is cooked. Place it on a plate and set it aside.
    5. Then, in the same skillet, stir fry the onion for 2 minutes, and add broccoli, zucchini, and bell pepper. You can add a little olive oil if needed.
    6. Further, cook on a medium flame until vegetables are crisp-tender. You can season them with pumpkin seeds if you want.
    7. Deglaze with chicken stock and add the cooked chicken bites back to the skillet and mix to combine.
    8. At last now, garnish with red chili pepper flakes and fresh parsley if desired.
    9. Finally, serve the yummy chicken bites in vegetables hot. Enjoy. You can include this delicious recipe in your 80kg to 60kg weight loss diet.
