Ingredients

  • Green chili- 2

  • Baking soda-1/2 teaspoon

  • Turmeric- 1/4 teaspoon
  • Tomato- 3

    Let’s discover the art of crafting this recipe which is a North Indian classic that marries spicy chickpea curry with fluffy flatbreads.

    • Firstly, you will have to soak the chickpeas in water overnight. Further, take a pressure cooker and add chickpeas or chole into it along with some dry tea leaves, water, salt, 5 cloves, a pinch of baking soda, and turmeric.
    • Secondly, bring to 5 whistles and then let it boil on low flame for about 15 minutes.
    • Thirdly, take a kadai and add 2 spoons of ghee to it.
    • Now, add chopped green chilis to the kadai and cook it till brown.
    • In a grinder add two tablespoons of chole and chopped tomatoes into it.
    • Now grind it and make a thick paste. It will help make the gravy thicker. Cook it for 12 minutes.
    • Further, add chole to the kadai. Do not separate the water from the white peas before mashing.
    • Next add chaat masala, salt, red chili powder, lemon juice, and chole masala into it.
    • Toast kulchas on a hot tawa with some ghee.
    • Finally, garnish the chole with coriander leaves and your chole kulche is ready to serve hot!
